  • Is sesame seed oil a polyunsaturated fatty acid?
  • Sesame seed oil is a highly unsaturated oil. Linoleic acid which is a polyunsaturated fatty acid (see Fact Sheet FAPC-196, Lipid Glossary) is the main oil component comprising about 40% to 50% of the all fatty acids present in the oil (see Table 1).
  • How is sesame oil refined?
  • Once the oil has settled after pressing, there is the presence of some oil cakes that are mixed up with the oil. Filtration is done to separate the seeds from the oil, making the refining level easier to extract the final oil. This is followed by the sesame oil refining process.
  • What are black sesame seeds?

  • How is oil extracted from sesame seeds?
  • Sesame seeds go through a series of processing steps to extract oil. The process is similar to that used for other oilseeds (see OSU Fact Sheets FAPC-158, Oil and Oilseed Processing I and FAPC-159, Oil and Oilseed Processing II). Two types of sesame oil are available in the market; a pale yellow and an amber-colored aromatic oil.
  • Do black sesame seeds contain lignans?
  • Some beneficial plant chemicals in sesame seeds, such as lignans, are found in large amounts in the outer hull of the seeds. Therefore, unhulled black sesame seeds typically contain more lignans than hulled white sesame seeds (15, 16, 17).
